If you have wooden skewers, soak them in water for 30 minutes.
Preheat the oven to 400F°/200C°.
Prepare the chicken and vegetables by slicing everything into bite-size.
Once the wooden skewers are ready assemble the skewers by alternating between each ingredient.
In a small bowl, combine the lime juice, honey, paprika, chilli powder, and salt.
Coat the skewers with the chili lime seasoning.
Place the skewers on a baking sheet with parchment paper and bake for 25 minutes, flipping them halfway.
In the meantime, prepare the rice by combining the rice and two cups of water in a pot.
Bring the pot to a boil, then reduce the heat to low, and cover for 12 minutes.
Plate the rice and skewers together.
