Ingredients

  • 1 cup of dry basmati rice
  • 240 g of chicken breast, cubed
  • 1 zucchini, sliced
  • 1 green bell pepper,
  • 1 red onion
  • 2 mushrooms
  • 3 tbsp lime juice
  • 1 tsp of honey
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp of salt

Directions

  • If you have wooden skewers, soak them in water for 30 minutes.
  • Preheat the oven to 400F°/200C°.
  • Prepare the chicken and vegetables by slicing everything into bite-size.
  • Once the wooden skewers are ready assemble the skewers by alternating between each ingredient.
  • In a small bowl, combine the lime juice, honey, paprika, chilli powder, and salt.
